Raschera dop biologica

Raschera is a Dop cheese produced using raw cow's milk. It can be produced in two different versions: round or square. The rind is thin, smooth and soft, grey or reddish coloured, and sometimes presents yellow tones and reddish embellishments. The cheese is elastic, white or ivory coloured, with sparse, evenly distributed small holes. The flavour varies significantly depending on the ripening period: fresh Raschera has a sweet and delicate flavour, whilst the more ripened version has a stronger, moderately spicy flavour. Excellent when paired with seasonal vegetables.

 

INGREDIENTS: organically farmed milk, salt, rennet, lactic cultures.

TYPE OF MILK: cow's milk.

MILK TREATMENT: raw.

RIPENING: minimum 30 days.

AVAILABILITY: all year.
